Lentils are truly nutritional powerhouses – they are easy to prepare, they store well, are a great source of protein, fibre and important vitamins and minerals and their texture and consistency make them ideal for replacing meat in recipes. Fibre-Friendly
Lentils are an excellent source of fibre at over 15g per cup. Lentils contain both soluble and insoluble forms fibre, both of which offer a host of benefits, such as regulating blood sugar levels, helping to lower cholesterol and helping to protect against heart disease (for more information on the health benefits of fibre, click here).
Protein
Lentils are also an excellent source of protein, providing over 16g per cup. Lentils are also virtually fat-free and very low in calories, making them an ideal source of protein. For those who are very active and require a lot of additional protein in their diet, adding lentils to meals can be a great (and delicious) way to add in protein without the additional fat and calories that often comes with other high-protein foods, such as meat and fish. And of course, lentils make a great protein option for vegetarians, as they can be used instead of meat in soups, casseroles and other recipes (see our lentil loaf recipe).
Iron
Iron is an essential mineral (which means that your body can’t produce it, so you must get it from outside sources) and is needed to transport oxygen throughout the body. Iron deficiency is one of the most common nutrient deficiencies, and can cause a variety of symptoms such as fatigue, weakness, dizziness, headaches, lack of concentration, hair loss, decreased immune function and lack of stamina. Lentils are high in iron, with one cup providing over 35% of the recommended daily intake, while being low in calories and fat.
Tryptophan
An essential amino acid that the body uses to synthesize protein, it's also a precursor for serotonin, which helps the body regulate appetite, sleep patterns and mood: All important factors in maintaining a healthy, active lifestyle. One cup of cooked lentils provides you with 50% of your daily recommended intake.
