banana oatmeal bread




Ingredients:

1 cup brown sugar

7 tb. canola oil (good for colon health)

2 large egg whites

1 large egg

2 large bananas

1 cup oats

1/2 c. milk (any kind will work)

2 cups whole wheat pastry flour or all purpose

1 tb. baking powder

1/2 ts. baking soda

1/2 ts. salt

1/2 ts. cinnamon




Directions:

Preheat oven to 350 degrees.

Combine first 4 ingredients in a bowl with a mixer and set aside.

Combine bananas, oats and milk. Add to sugar mixture beating well.

Combine flour, baking powder, baking soda, salt and cinnamon- stir with a whisk. Add to sugar mixture beating until just moist.

Spoon batter into a 9x5 inch loaf pan with cooking spray.

Bake at 350 degrees for 1 hour and ten minutes. Cool for ten minutes on a wire rack. Remove from pan. Cool completely on a wire rack.

Makes 18 servings.
