1/2 lb of chicken breasts cut into 4 strips
Cajun Seasoning
4 slices of bacon
1/4 avocado
2 slices of tomato
red onion- thinly sliced
2 oz cheddar cheese (thinly cut)
dijon mustard (optional)
2 whole wheat buns or ciabatta bread
1. Cook the chicken over medium heat with cajun spices on a stovetop or grill until white throughout.
2. Cook the chicken on a stovetop according to directions- drain on a paper towel and set aside.
3. While cooking the chicken, toast the buns with cheddar cheese on one side on broil in the oven.
4. Assemble the sandwiches as follows: bun, dijon (if preferred) 2 slices of chicken, 2 slices of bacon, 1/8 avocado, 1 slice of tomato, red onion, top bun.
Makes 2 sandwiches. Enjoy with coleslaw or other veggie of choice.
