heirloom tomato and garbanzo bean salad




Ingredients:

Adopted from Experience Life Magazine

1 15 oz can of garbanzo beans, drained and rinsed

1 pint heirloom cherry tomatoes halved

2 cups chopped cucumber

1/2 cup red onion, thinly sliced

1 cup diced red bell pepper

1/2 cup italian flat-leaf parsley, coarsely chopped

1/4 cup fresh mint leaves, coarsely chopped

1 cup crumbled feta cheese

1 fresh lemon, juiced

1/3 cup extra virgin olive oil

fresh ground pepper to taste

 




Directions:

1. Place first 8 ingredients in a large bowl and mix until combined. 2. Mix lemon, olive oil and pepper in a separate container and shake to combine. Dress salad immediately. Enjoy!
