*2 medium size delicata squash
*2 tbsp. extra virgin olive oil
*2 tbsp. fresh rosemary- chopped
*salt/pepper to taste
*1/6 cup of pure maple syrup
Directions:
Preheat oven to 425 degrees.
1. Cut delicata squash lengthwise once and then proceed to cut into 1 inch strips the opposite way. Don't worry about taking out the seeds or cutting off the skin- both are edible and delicious!
2. In a medium size roasting pan, place squash and mix with olive oil. Season with salt and pepper.
3. Spread the rosemary and maple syrup evenly over the squash.
4. Roast for approximately 30-40 minutes, stirring every 10-15 minutes.
