*1 lb. pasta- shells are best
*5-6 broccoli stalks- finely chopped (4 cups total)
*6 garlic cloves- minced
*1/3 cup extra virgin olive oil
*fresh ground pepper/salt to taste
*1/2 cup freshly grated parmesan
Directions:
1. Heat water in a large pot to boil. Add pasta and cook until al dente- according to package directions.
2. Meanwhile, in a large skillet, saute the broccoli and garlic in olive oil until garlic is light brown in color and broccoli is bright green and crisp-tender. Add plenty of pepper and a sprinkling of salt. Pour in a couple of spoonfuls of pasta water into the skillet to steam the broccoli.
3. When the pasta is al dente, drain it and top with broccoli mixture and grated cheese. Serve immediately.
