broccoli slaw




Ingredients:

1.5 cups finely chopped broccoli

1/4 cup red onion, finely diced

1/3 cup raisins

1/4 cup pumpkin seeds roasted at 350 degrees until lightly browned

 

dressing

1/3 cup raw cashews

1/8 cup water

1/8 cup red wine vinegar

1.5 tb. sugar

1 ts. dijon

salt




Directions:

 

Mix together all slaw ingredients. Set aside.

In a food processor blend all dressing ingredients until smooth. Mix together with slaw ingredients and let marinade at least 15 minutes prior to serving.

 

Makes 2 servings. Enjoy!
