chocolate cupcakes




Ingredients:

1 cup avocado puree

1.5 cups sugar

1 cup milk (any kind will work)

1 ts. vanilla extract

1/2 ts. balsalmic vinegar

1 large egg whites

2 cups flour (you may use all purpose or whole wheat pastry)

1/2 c. unsweetened cocoa powder

1 ts. baking soda

1/2 ts. salt




Directions:

Preheat oven to 350 degrees.

In a large electric mixing bowl add avocado, sugar, milk, vanilla and vinegar- blend until smooth.

Beat the egg whites into the mix one at a time until incorporated.

Add the rest of the ingredients and mix until smooth.

Divide batter into 12 muffin tins lined with holders.

Bake 15-20 minutes or until the tops are lightly browned and bounce back when touched.

 

Cool completely before serving- the avocado is slightly detectable when warm, but is gone when cooled completely. Top with your favorite frosting if desired.
