Adapted from "Deceptively Delicious" by Jessica Seinfeld
1/4 cup butter
1 cup avocado- pureed in a food processor
1 cup confectioner's sugar
1/2 cup unsweetened cocoa powder
1 ts. pure vanilla extract
1/4 cup cornstarch
Directions:
1. In a medium saucepan heat the butter over low heat. 2. Stir in teh avocado puree, sugar, cocoa powder, and vanilla. Cook mashing well with a spatula. 3. Continue cooking/stirring for about 3-4 minutes until the mixture thickens. 4. Take the pudding off of the heat and gradually add in the cornstarch. Serve warm. Enjoy! Makes 6-8 servings.
