Orzo Salad




Ingredients:

*1 cup whole wheat orzo- cook according to packages directions, drain. (let cool) *1/4 cup sundried tomatoes packed in olive oil. Slice. *1/4 cup kalamata ollives- pitted, sliced. *1/4 cup red oinon- sliced thin. *1/2 cup red bell pepper- finely sliced. *2 cups spinach *1/2 cup feta cheese- crumbled Dressing *1/4 cup olive oil *2 tbsp. lemon juice *salt/pepper to taste *1/2 tsp. ground basil



Directions:

1. Mix all ingredients in a bowl until blended. 2. Coat with dressing- serve immediately. Makes 6 servings.
