bran flaxmeal muffins




Ingredients:

Adopted from Bobs Redmill

1.5 cups whole wheat white flour

3/4 cup flaxmeal

3/4 cup oat bran

1 cup brown sugar

2 ts. baking soda

1 ts. baking powder

1/2 ts. salt

2 ts. cinnamon

1.5 cups shredded carrots

2 bananas mashed or 1 cup pumpkin puree

1/2 cup raisins

1 cup walnuts

3/4 cup milk or soymilk

1 egg

2 egg whites

1 ts. vanilla.




Directions:

Preheat oven to 350 degrees.

Mix dry ingredients and wet ingredients separately. Mix slowly together and divide evenly into 12 muffin tins with cups. Bake for 15 to 20 minutes or until set.

 

Enjoy this heart healthy breakfast! It is especially good with peanut butter.
