green bean salad




Ingredients:

1 lb green beans (sides cut off)

1 cup cherry tomatoes halved

8 button mushrooms (cut into 4s)

1/2 cup of roasted cashews

 

dressing

1 garlic clove minced

2 shallots minced

1 tb. dijon

2 tb. red wine vinegar

1/6 cup olive oil

salt/pepper to taste




Directions:

1. Place beans in boiling salted water for approx. 3 minutes. Immediately drain and submerge in ice water to stop the cooking process.

2. Place all ingredients in a bowl and toss with dressing. Serve immediately.

Serves 4.
