1/2 lb. chicken breasts cut very thin (eight pieces)
8 oz fresh mozzarella in water- drained
1/4 cup prepared pesto
8 slices of proscuitto
Pound chicken as thin as possible with a mallet. Spread with a thin layer of pesto, top with one slice of proscuitto per piece and top with mozzarella. Bake at 325 degrees for approximately 12 minutes or until chicken is done.
Makes 2-4 servings. Great with grilled asparagus.
