*1 lb. ground chicken
*12 ounces chorizo or andouille sausage- precooked
*1 tbsp. oilive oil
*1 cup chooped onion
*3 garlic cloves minced
*1 16-ounce can of kidney beans, drained
*1 16-ounce can of stewed tomatoes
*1 16-ounce can of tomato sauce
*1 tsp. salt
*1 tsp. chili powder
*1 tsp. dried oregano
*1/2 tsp. pepper
*1/8 tsp. cayenne
Garnishes: sour cream, cheddar, avocado, red onion.
Directions:
1. Saute ground chili in a large skillet, set aside in a separate dish. Cut sausage into 1/2 inch slices then cut each slice in half again. In the same pan, saute sausage until lightly browned; set aside with the ground chicken.
2. In the same pan, saute onions with olive oil over medium heat until soft but not brown. Add garlic and saute 2 more minutes. Add chicken and sausage back to the pan with remaining ingredients. Simmer, uncovered, for 1 hour. Serve with garnishes is desired. Makes 4 servings. Enjoy!
