12 oz pizza dough from refrigerator section of grocery store or local pizzeria (at room temperature)
salt/pepper/red pepper flakes
rosemary (2 tb.)
1/2 cup shredded high quality parmesan
1/4 of a red onion thinly sliced
1 cup crimini mushrooms sliced
2 pre-cooked sausage links (I like chorizo, but all will work) sliced
1 cup part skim mozzarella
Preheat oven to 450 degrees.
Slowly and with patience roll out the pizza dough until it is thin (this will take time.) Spread on a pizza stone. Put seasonings evenly on the dough. Spread with rosemary, then parmesan. Top evenly with red onion, crimini mushrooms and sausage. Top with mozzarella. Bake for 14 minutes.
Makes 2-3 servings.
