4 eggs (or 4 egg whites, 1 egg)
1/4 cup diced red or green peppers
1/4 cup diced onion
2 oz cooked sausage link (I like chorizo, but any kind will work)
salt/pepper
1 oz part skim mozzarella shredded (optional)
1/4 of an avocado sliced
salsa for serving
In a bowl beat eggs and season with salt/pepper. In a pan saute the sausage, onions and peppers for approx. 10 minutes, stirring regularly. Add eggs and continue to scramble until they are no longer runny. Add mozzarella at this time if you choose. Serve with avocado and salsa.
Serves 1 hungry person.
