2 whole wheat buns or ciabatta bread
1 chicken breast cut length wise into 4 pieces
2 pineapple rings
1/2 of an avocado thinly sliced
2 oz of part skim mozzarella sliced
1 serano pepper thinly sliced
lowfat mayonnaise (optional)
1/4 cup teriyaki sauce
1. In a pan or on the grill over medium heat cook the chicken with the teriyaki sauce until chicken is white throughout.
2. Broil the buns in the oven with the the mozzarella on one side until melted.
3. Build your sandwich...Bun, mayo (optional), 2 slices of chicken, pineapple ring, 1/4 avocado, 1/2 sliced serano pepper, top bun.
