Slaw-
*2 cups thinly sliced green cabbage
*1 cup rainbow chard- thinly sliced
*2 medium carrots- grated
*1 large apple- thinly sliced into bite size pieces
*1/2 cup sliced parsley
*1/2 cup apricots- chopped
*3/4 cup toasted unsweetened-coconut (toast at 350 degrees for approx. 5-8 minutes)
Dressing-
*1/2 cup raw cashews
*1/4 cup water
*1/4 cup lemon juice
*1/2 ts. cinnamon
*1/4 ts. nutmeg
*1/4 ts. allspice
*1/4 ts. ginger powder
*1/2 ts. salt
*2 Tb. maple syrup
Directions:
1. Compine all slaw ingredients in a large bowl and set aside. 2. Combine all dressing ingredients in a food processor and pulse until well blended. Refrigerate. 3. Toss the slaw and the dressing together right before you serve it. Makes 4 servings. Great with a side of sausages!
