Low Fat Taco Salad




Ingredients:

1/2 lb. of chicken breast- sliced thin

taco seasoning

1/2 can of black beans drained

1/4 avocado diced

1/2 tomato diced

1/4 red onion diced (small)

1 cup of romaine lettuce shredded

prepared salsa

sour cream (optional)




Directions:

Cook chicken over medium heat in a pan with cooking spray. When cooked throughout (approx 12 minutes), take out of pan and shred with two forks. Return to pan and add taco seasoning according to seasoning directions. Keep warm. Warm up the beans in another pan or microwave. Assemble salad as follows:

1. Chicken

2. Beans

3. letuce

4. tomatoes

5. avocados

6. red onions

salsa to top.

Enjoy! Makes one large dinner or two medium salads.
