Lowfat Heart healthy zucchini bread




Ingredients:

1 1/2 cups whole wheat flour
3/4 cup sugar (mix of brown and white is fine)
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons cinnamon

1/2 ts. nutmeg
2 eggs
2 1/4 cups zucchini (about 2 medium)
1/4 cup oil (greek yogurt can be used in place if you desire)
1 1/2 teaspoons vanilla
1/4 cup dark chocolate chips




Directions:

Preheat oven to 350 degrees. 1. Combine dry ingredients in a large bowl, set aside. 2. Combine wet ingredients (except chocolate chips) in another bowl. 3. Slowly mix the wet ingredients in with the dry ingredients. Add in the chocolate chips. 4. Pour into a standard sized bread pan prepared with cooking spray. Bake for approximately 50 minutes or until a knife inserted in the middle comes out clean.
