lowfat mac and cheese




Ingredients:

Adopted from vegetarian times

5 oz macaroni (I like whole wheat)

1 tb. butter

1 tb. flour

1 1/4 cups milk

1 1/8 cups grated extra sharp cheddar

1/4 cup breadcrumbs

1/4 cup green onions

salt




Directions:

Preheat oven to 400 degrees.

Cook pasta al-dente, drain. Melt butter in a pan over medium heat. Stir in flour and cook for one minute. Add milk and cook an additional 6 minutes or until mixture is thick. Remove from heat and add 3/4 of cheese. Season with salt. Add mixture to noodles. Top with breadcrumbs and green onions. Put into a oven safe pan coated with cooking spray and sprinkle with the remaining cheese. Bake 45 minutes or until crisp. Serves 4.
