*2 cups whole-wheat flour
*1 ts. baking powder
*1/2 ts. baking soda
*1/2 ts. salt
*1/2 ts. ground cinnamon
*1 cup lowfat buttermilk
*1/4 cup honey
*3 Tb. canola oil
*1 large egg, lightly beaten
*1/2 cup raisins
*1/4 cup chopped walnuts
*cooking spray
Directions:
1. Preheat oven to 350 degrees.
2. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next four ingredients in a large bowl; set aside.
3. Combine buttermilk, honey, oil and eggs; stir with a whisk. Make a well in the center of the flour mixture; add buttermilk mixture and stir until moist. Stir in walnuts and raisins.
4. Spoon batter into an 8x4 inch loaf pan coated with cooking spray. Bake at 350 degrees for 45 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan for 10 minutes on a wire rack; remove from pan, and cool completely on wire rack. Yields 16 servings.
