Carrot Patties
Ingredients:
- 1 pound carrots, grated
- 1-2 clove garlic, minced
- 4 eggs
- 1/4 cup whole wheat flour
- 1/2 cup bread crumbs
- 1/2 teaspoon salt
- 1 pinch freshly ground black pepper
- Dash of chili powder (optional)
- 2 tablespoons olive oil
Directions:
- In a medium size mixing bowl, combine all ingredients, except the olive oil, and mix well.
- Heat oil in a frying pan over medium-high heat. Form the mixture into patties and fry until golden brown on each side.
