Carrot Patties




Ingredients:

  • 1 pound carrots, grated
  • 1-2 clove garlic, minced
  • 4 eggs
  • 1/4 cup whole wheat flour
  • 1/2 cup bread crumbs
  • 1/2 teaspoon salt
  • 1 pinch freshly ground black pepper
  • Dash of chili powder (optional)
  • 2 tablespoons olive oil



Directions:

  1. In a medium size mixing bowl, combine all ingredients, except the olive oil, and mix well.
  2. Heat oil in a frying pan over medium-high heat. Form the mixture into patties and fry until golden brown on each side.
