Low Fat Banana Bread




Ingredients:

  • 1 1/2 cup all-purpose flour
  • 3/4 cup white sugar
  • 1 1/4 teaspoon baking soda
  • 1 pinch salt
  • 1 tablespoon ground cinnamon
  • 2 egg whites
  • 1 cup banana, mashed (about 3 bananas)
  • 1/4 cup applesauce



Directions:

  1. Preheat oven to 350 degrees F. Lightly grease an 8x4 inch pan.
  2. In a large bowl, stir together flour, sugar, baking powder, baking soda, salt and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into greased pan.
  3. Bake for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing.

  Turned out great! I added a bit of grated carrot, just to up the health factor. I used organic ingredients and used 1 cup of organic wheat flour and 1/2 organic all purpose flour, to make it even more "healthy".
