potato delight

*4 small red potatoes- chopped into 1/2 inch cubes *1 precooked sausage link- chopped *1 red or green pepper- chopped *1/4 of a red onion- chopped *2 oz mozzarella cheese- shredded *2 eggs *cooking spray *salt/pepper

1. In a large saucepan add the sausage link and potatoes- cook over medium heat, stirring regularly, for approximately 10 minutes. 2. Add the peppers and onions and cook an additional 10 minutes. Continue to stir regularly. 3. In a separate saucepan coated with cooking spray, add the eggs and fry approximately 3-5 minutes, turning once. Season with salt and pepper. 4. Add the mozzarella to the potato mixture and turn to incorporate. Separate the potato mixture onto two plates and immediately top each with one egg. Enjoy!
