*1 (9 ounce) package of fresh fettucine
*1/2 cup oil packed sundried tomatoes- drained, oil reserved
*2 ts. of olive oil- reserved from draining the tomatoes
*1 lb. chicken breasts- sliced into one-inch pieces
*1/3 cup chopped shallots
*1/2 cup dry white wine
*1/3 cup heavy cream (1/2 and 1/2 can be used)
*2/3 cup fresh basil, chopped- divided
*1/4 cup shredded parmesan
*salt/pepper to taste
Directions:
1. Saute chicken and shallots in oil for approximately five minutes over medium/high heat.
2. Reduce heat to medium and add wine and cream- cook an additional three minutes.
3. While chicken cooks, boil fettucine in water according to package directions. Drain.
4. Combine pasta, tomatoes, chicken mixture, 1/3 c. basil, cheese and salt/pepper. Sprinkle with remaining basil and serve immediately.
Makes 4 servings.
Notes: This is a lower fat version of one of my favorite birthday dinners!
