Whole Wheat PB Raisin Cookies




Ingredients:

1/2 cup Raisins

1/8 cup Flaxseeds Meal

1/4 tsp Sea Salt

1/2 tsp Baking Soda

1/4 cup Peanut Butter

1/4 cup Extra Virgin Olive Oil

1/4 cup Brown Sugar

1/4 cup White Sugar

1 Eggs

•1/2 tsp Vanilla Extract •1-1/8 cups Whole Wheat Pastry Flour *Dash of cinnamon (optional)



Directions:

1. Mix together all ingredients except whole wheat pastry flour

2. Slowly incorporate flour until just combined

3. Preheat oven to 375 degrees

4. Spoon cookie mixture onto ungreased cookie sheet- evenly spacing 24 cookies (may need two sheets)

5. Bake for approximately 12-13 minutes or until lightly browned on top
