1 tb. butter 1 lb. pumpkin (peeled and cut into chunks) 3 medium apples (peeled, cut into chunks) 1 medium yellow onion- chopped 2 ts. curry powder 1 ts. cumin 1 ts. coriander 3 cups of chicken stock 1 cup of whole milk or coconut milk salt and pepper to taste
In a large pan heat the butter until it is foaming. Add the pumpkin, apples and onions- saute about 2 minutes. Add the seasoning and chicken stock- stir until well blended. Cover and simmer for approximately 30-40 minutes until the veggies are tender. Add milk and blend until smooth in a blender or food processor. Makes about 6 servings. Enjoy!
