1 1/4 cup whole wheat pastry flour
1/4 ts. baking soda
1/4 ts. salt
3 tb. butter (melted and cooled)
1 tb. applesauce
1 egg
2 ts. vanilla
1 cup brown sugar
2 tb. peanut butter
1/4 cup salted peanuts- chopped
Directions:
Preheat oven to 350 degrees. Mix first three ingredients together in a bowl and set aside. Mix butter, applesauce, and egg until well combined. Slowly mix in vanilla and sugar and peanut butter. Mix wet ingredients slowly in with dry until combined. Stir in the peanuts. Form into 1 inch balls and bake 2 inches apart on a greased cookie sheet for approximately 12 minutes. Makes 24 cookies.
